The Certificate III in Commercial Cookery provides you with the essential skills and knowledge required to join the kitchen as an apprentice chef.

Our highly qualified teachers have experience in some of Australia's most well known kitchens. They are dedicated to sharing their knowledge and will prepare you for a fast paced career in commercial cookery.

Hone your skills in the basic methods of cookery and learn how to prepare poultry, seafood and meat dishes. You will also discover the skills to work effectively in the kitchen and maintain the quality and safety of food you are preparing.

Successful completion of this course will enable you to continue on to the Certificate IV in Commercial Cookery or enter the workforce as a qualified cook. Course details

Resources required

There is a set uniform to be purchased.  A representative from our supplier Totally Workwear will be available at Orientation for you to be fitted, order and make payment. If you do not attend the Orientation day, you will be responsible for making your own arrangements directly with the supplier, Totally Workwear within seven days of the scheduled Orientation day.

Students are required to have the following equipment for practical and live lessons:

  • A compulsory uniform consisting of a chef's jacket, chef's pants, chef's cap, white necktie, a white bib style apron purchased from Totally Workwear (approximate cost $150.00)
  • A knife kit (if need to be purchased from Totally Workwear it will cost approximately $275.00)
  • Black enclosed leather non-slip shoes (if need to be purchased from Totally Workwear they will cost approximately $77.00)

Victorinox knife set:

  • Large cooks knife (blade length min. 25cm)
  • Paring knife (blade length min. 8cm)
  • Serrated bread knife
  • Boning knife (approx. 17cm)
  • Filleting knife (approx. 17cm)
  • Turning knife
  • Large sharpening steel
  • Spatula (200mm straight stainless steel with black plastic handle) (palette knife)
  • Thermo white plastic plain and star piping nozzles (9mm) - one of each
  • Lockable 16 pocket Chef bag

Whilst in attendance of practical classes you must wear your chef's uniform. This should be brought with you to classes and changed into upon arrival at TAFE Queensland Gold Coast and not worn on your way to or from the campus due to hygiene regulations.

  • It is recommended that students have access to a reliable internet connection to access TAFE Queensland's online systems, and a computer with up-to-date software, including Microsoft Office, Adobe Acrobat Reader and Adobe Flash Player. This equipment and software is available for students to use at a number of TAFE Queensland locations.
  • Students are required to have a valid and appropriate email address.
  • Please provide your own personal stationery.

Timetable

Classes are held full-time for 12 months on Wednesday and Thursday between 10.15am-5.15pm and Friday between 8.00am-5.15pm at Southport, Level 1 (Ground Floor), Room 104 (these times reflect Semester 1 only, times may change in Semester 2) plus work experience in industry, including master classes with industry professionals.

Placement

You will have the opportunity to complete work placement in a variety of four and five star hotels, entertainment venues, restaurants and cafes across the Gold Coast and gain invaluable insights from Executive Chefs where you will develop job ready skills. In addition, this will be your opportunity to impress your host employer and apply your learning in a fast-paced commercial kitchen in a variety of venues such as hotels, hospitals, aged care facilities, pubs and clubs.

Payment Plan

If you have difficulty paying the full cost of a course up front you might be eligible for a payment plan. This will allow you to pay for your course in instalments, rather than one upfront payment at the time of enrolment.

Subsidised

The Queensland Government will offset the cost of study for eligible students. You will still need to pay for a portion of your study costs. The amount above is what you will need to pay.

Concession
