Create and indulge in patisserie delights

Learn the fundamental techniques to making French pastry!  This is a hands-on workshop where you will learn to prepare and cook delicious pastries, breads and baked delights with teacher Max Chong.

Throughout this course students will be guided on making bread, butter croissants, pate surcee (sweet pastry), coconut tarts, pate choux (choux pastry) profiteroles, cream puffs, éclairs, Paris breast, hot soufflés, organic vegan chocolate mousse, green tea sponge with custard base, crème chantilly, chocolate chantilly and crème patisserie.  Throughout this course students will experience a variety of cooking, preparation and 'watch and follow' demonstrations by the teacher.

This short course is non-accredited therefore is not registered with the National Training Register. Course details

Resources required

  • Included are all recipes and all the food ingredients.
  • Please bring the following baking utensils - spatula, piping bag, piping nozzle, small knife, take away containers. Also, students please bring an apron, washing up cloth, two tea towels, a pen and notebook.
  • Students must wear enclosed shoes which are flat and comfortable as we are working in a commercial kitchen and this is a workplace health and safety requirement.
  • Students need to present their Confirmation of Enrolment to the car park attendant each week to be eligible for discounted parking.

Timetable

Classes are held on:

  • Saturday 21 October - Saturday 18 November 2017 from 9.00am-12.30pm (5 sessions) at the TAFE Queensland Gold Coast's Hospitality Hub, 11 Nerang Street, Southport

Please note - This course is offered once a week on a specific day each week. Throughout the year we vary the day that each delivery package may be offered to suit students’ needs and availability. Students are enrolling in a specific day for the duration of the course. Refer to the dates on your Confirmation of Enrolment.

Outcome

Students receive demonstration and hands-on tuition on how to produce a varied range of French Patisserie sweets using ingredients that are readily available today.
