The Certificate IV in Commercial Cookery provides the technical skills and advanced knowledge required to join a kitchen brigade or continue with further specialised study.

This course equips you to work within the kitchen at a supervisory level. You will gain hands-on culinary experience in the preparation of appetisers, salads, stocks, sauces, soups, seafood, meat, poultry, breads, pastries and cakes. Develop your supervisory skills and learn how to manage diversity in the workplace, implement sustainable practices, provide leadership, manage finances, and coordinate cooking operations.

Successful completion of this course will enable you to enter the workforce as a chef, chef de partie or demi chef. Course details

Entry requirements

  • It is recommended that students have the knowledge and competence such as those attained by the completion of Year 10 OR similar life and work experience and/or qualifications.
  • To access Higher Level Skills funding for this course the prospective student must meet all subsidy eligibility.  Students must be an Existing Worker in the Tourism and Hospitality industry and must already hold a trade qualification (Cert III) in the Tourism and Hospitality industry. 

Recognition of Prior Learning (RPL) 
If you feel that you already have the skills and knowledge from previous work experience relating to the Unit/s of Competency you are about to undertake, you can apply for RPL by contacting the RPL Coordinator at

Credit Transfer
TAFE Queensland will recognise the outcomes of training achieved from any Registered Training Organisation throughout Australia.  A qualification cannot be attained entirely through credit transfer.

Resources required

As part of the course requirements you will need to purchase and wear a set uniform. A representative from our supplier Totally Workwear will be available at Orientation for you to be fitted, to order and make payment directly to Totally Workwear. If you do not attend the Orientation day, you will be responsible for making your own arrangements directly with the supplier, Totally Workwear within seven days of the scheduled Orientation day.

Students are required to have the following equipment for practical and live lessons:

  • A compulsory uniform consisting of a chef's jacket, chef's pants, chef's cap, white necktie and a white bib style apron purchased from Totally Workwear (approximate cost $150.00)
  • A knife kit will need to be purchased (approximate cost $275.00 - if purchased through our supplier Totally Workwear)
  • Black enclosed leather non-slip shoes (approximate cost $77.00 - if purchased through our supplier Totally Workwear)

Victorinox knife set:

  • Large cooks knife (blade length min. 25cm)
  • Paring knife (blade length min. 8cm)
  • Serrated bread knife
  • Boning knife (approx. 17cm)
  • Filleting knife (approx. 17cm)
  • Turning knife
  • Large sharpening steel
  • Spatula (200mm straight stainless steel with black plastic handle) (palette knife)
  • Thermo white plastic plain and star piping nozzles (9mm) - one of each

Whilst in attendance of practical classes you must wear your chef's uniform. This should be brought with you to classes and changed into upon arrival at TAFE Queensland Gold Coast and not worn on your way to or from the campus due to hygiene regulations.

  • It is recommended that students have access to a reliable internet connection to access TAFE Queensland's online systems, and a computer with up-to-date software, including Microsoft Office, Adobe Acrobat Reader and Adobe Flash Player. This equipment and software is available for students to use at a number of TAFE Queensland locations.
  • Students are required to have a valid and appropriate email address. 
  • Please provide your own personal stationery.


  • Classes will contain both international and domestic students.
  • Full-time classes are three days per week at Southport.
  • Duration is 18 months.


As an enrolled student at TAFE Queensland Gold Coast you may be required to attend practical work placements as part of your studies. This is at the discretion of the teacher.

As an enrolled student of TAFE Queensland Gold Coast, you may be required to attend practical work placements as part of your studies. During these placements, you may become familiar with information that is confidential to that workplace (for example financial or business affairs, personal affairs and family background of staff and clients, technical information, trade secrets, know-how, formulae, processes, ideas, and inventions). You must not divulge any confidential information that you become aware of during a placement. Breaches of confidentiality will be considered to be acts of behavioural misconduct and may result in disciplinary action.

Payment Plan

If you have difficulty paying the full cost of a course up front you might be eligible for a payment plan. This will allow you to pay for your course in instalments, rather than one upfront payment at the time of enrolment.


The Queensland Government will offset the cost of study for eligible students. You will still need to pay for a portion of your study costs. The amount above is what you will need to pay.

Higher Level Skills Subsidy

The Higher Level Skills Subsidy is a one-off subsidy that offsets the cost of an eligible Certificate IV or higher courses.

You're eligible for the Higher Level Skills Subsidy if you:

  • Are 15 years or older and no longer in school
  • Live in Queensland full time
  • Are an Australian or New Zealand citizen, permanent resident, or temporary resident with the necessary visa or work permits
  • And don't currently have (or are enrolled in) a certificate IV or higher level qualification.
  • Other restrictions or eligibility criteria may apply


You are eligible for the concession price of a course if you are eligible for subsidised training, and are listed on an Australian Government Low Income Health Care Card or Pensioner Concession Card, if you are Aboriginal or Torres Strait Islander, you hold a Department of Veterans' Affairs Pensioner Concession Card, or if you have a disability.

Additional costs

There will be additional costs for a uniform and knife kit.


Possible job titles include: Chef, Commis, Demi Chef, Chef Tournant, Junior Chef de Partie, Chef de Partie, Sous Chef, Executive Chef, Café owner. 

Chef’s plan, organise, prepare and cook food in dining and catering establishments. Duties may include planning menus, ordering food supplies, and organising and advising staff on cooking procedures.

Job roles:
This qualification provides a pathway to work in various kitchen settings, such as restaurants, hotels, clubs, pubs, cafes, cafeterias and coffee shops.

When you have finished your course, you will have gained the skills needed to enter the workforce, or you can choose to move on to further education with a competitive advantage.

After achieving SIT40516 Certificate IV in Commercial Cookery individuals could progress to SIT50416 Diploma of Hospitality Management.

University pathways
If you want to go on to further study at university, TAFE Queensland has a pathway option to get you there. In many cases, completing one of our diplomas will give you a full year of credit towards a degree with one of our partner universities. That means cutting down the amount of time you need to complete your degree, or even enrolling straight into the second year of your university course.  Contact the university of your choice prior to enrolling.
